The Apulian Evo oil Uellì comes from the grinding of olives from our land located in Carovigno and Torre Guaceto, cultivated without the use of chemical fertilizers and pesticides. Since the beginning of 2016, we have been making organic farming our development strategy aimed at creating the best agronomic conditions.
Our oil will be certified “organic” in less than a year, but we would like to inform our buyers that since the beginning of 2016 we are adopting a method of cultivation that allows only the use of natural substances.
What does our “Uellì” oil, tell us? An oil production from cultivars of cellina and ogliarola, in a quality policy. For us, time, patience and precision are the musts.
Uellì is an extra virgin olive oil from Apulia, extracted by means of mechanical cold pressing procedures that gives the palate, balance in scents and flavors.
Puglia is the home to the extra virgin oil, prince of the Mediterranean diet.
All that glitters is not gold; every extravirgin oil of olive, born from territories and different climates, from variety of different olives, methods of harvest, workmanship that change from crusher crusher. All that influences the characteristic and then the difference of price among similar extravergin oils only in appearance.
So, many people ask us how to spot the difference between a good evo oil from an otherone. We try to give you some recommendation.
The LABEL
Read the label is crucial to your choice. An important indication is given by the words “cold extraction” or “cold pressing”. In order to keep all the scents intact, the crushed olives must be pressed at a temperature of less than 27°. This means that the processing must follow an artisanal method, which makes slowness a quality and which allows to squeeze a smaller quantity of oil compared to a not cold pressing.
EXTRA VIRGIN OIL BY MILL
Mill’s oil is better than industrially processed olive oil. Our advice is to choose oil mills or farms that guarantee you a short supply chain or that the process that goes from cultivation to bottling takes place within them, without intermediaries.
THE FRAGRANCE
The perfume tells the story of the oil: when you open an extra virgin olive oil bottle “Uellì” , its bouquet inebriates you, telling you about olives picked by hand and pressed before fermentation begins.

THE COLOR
Colour is not necessarily a sign of quality; trust colour only when you have to evaluate ripeness and clarity. It is common for an oil mill to have a dense and visible base, a sign of craftsmanship, according to tradition.
TINGLING IN THE MOUTH
If you taste our Apulian extra virgin olive oil “Uellì” and feel a slight tingling, you are in front of a fine oil. In Coratina olives you will feel it more, in Peranzana olives it will be less decisive.
YOU CAN NEVER PAY TOO MUCH FOR EXCELLENCE
Excellence is paid for; low price, here, is synonymous with low quality. It happens that for the production of industrial oils are used olives harvested from the ground or in the process of decay, the chemical agents will make the final product free of odors and unpleasant flavors. The costs of cultivating the olive grove (ploughing, pruning, treatments), harvesting, milling, the yield that depends on the year, can not give you a price of 5 euros per liter. First of all, the quality of the extravergin oil is done, in the field, all year round, through the regular pruning and irrigation systems necessary considering the climate changes.
You will discover that there are still realities, such as our farm Agricola Vittoria with its oil “Uellì”, where the art of oil is practiced according to tradition.

CLASSIFICATION: Extra virgin olive oil of Apulia of superior category, obtained directly from olives and only by mechanical procedures.
RECOLLING AREA: Carovigno – Serranova (Brindisi)
VARIETY (CULTIVAR): Cellina and Ogliarola, Italian variety adapted in Salento, where it has found an excellent habitat for cultivation.
Owned olive trees located on about 5 hectares. Average age of the plantsis 70 years.
TIME OF COLLECTION: October – November.
RECOLLING METHOD: Directly from the plant, using hydraulic combs.
EXTRACTION TIME: Same day as harvest.
METHOD OF EXTRACTION: Cold cycle mechanics.
Average yield: 11% (11 kg of oil per 100 kg of olives).
STORAGE: In stainless steel silos/ controlled temperature.
OIL ACIDITY: 0,10- 0,60% (Reg. CE 2568/91 and following – maximum value for extra virgin olive oil: 0,80%).
STORAGE: It is recommended to store at a temperature between 12 and 18 ° C, in a cool and dry place, protected from light and heat. Abrupt and prolonged drops in temperature can cause the crystallization of waxes naturally present and lead to the freezing of the product with the formation of white spheres in suspension. This condition does not affect the quality of the product but testifies to its genuineness.
DURABILITY: 18 months from the date of packaging.
COLOUR: Deep yellow with shades of leaf green.
BOUQUET: Olive fruit and lettuce leaf.
FOOD MATCHINGS: Bruschette, soups, grilled fish and white meat, vegetable dishes.
TASTE: In the mouth is complex and pleasant and, in addition to almond adds hints of oily fruit and balsamic tones of basil and parsley. The body has a slight note of wild chicory that disappears into the overall sweetness.
